About the Author
René Redzepi became head chef and co-founder of noma in 2003. Since then he has become one of his generation's most respected chefs with noma winning the Best Restaurant in the World award four times and himself being honoured in Time's 100 Most Influential People. After relocating his entire team to open noma pop-up residencies in Tokyo, Japan (2015), Sydney, Australia (2016) and Tulum, Mexico (2017), Redzepi returned to Denmark to reopen noma in February 2018, having closed the restaurant in its original home on Copenhagen harbor twelve months earlier. Redzepi also established the not-for-profit MAD Symposium in 2011 to galvanize the creative potential of the global cooking community.
My wife got this book for me for my birthday last month because she saw me geek out over the Noma Guide to Fermentation. She had no idea that it was Rene Redzepi’s journey to get back on track, figure out what to do with Noma, cure his burn out, and get his creativity back. Nor did she know that I’m also experiencing burnout and a dip in creativity right now. It is Rene Redzepi’s work journal for a year between 2013 and 2014. It really spoke to me. Some of their approaches (Trash Cooking, Saturday Night Projects, using unconventional ingredients to make a dish that looks like a conventional dish but that tastes completely different) have parallels in tech world and I’m excited to try them out. I also appreciate Redzepi’s focus on putting in the work with your hands in order to clear your head. Pure coincidence: Multiple times the entries I read reflected similar struggles or triumphs that I also experienced that day. This book inspired me to keep my own work-related journal this year. Like Redzepi, I want my creativity back. I want to get out of the weeds. I want to get excited about my work again. I started on my birthday and I haven’t missed a day yet. Ein sehr sehr gutes Buch, sehr inspirierend und auch informativ. Der Buchumschlag sowie das Papier ist sehr hochqualitativ. Ich bin mir sicher, dass ich dieses Buch noch nicht einmal wieder lese. Ich habe dies auch schon als Geschenk auch gekauft. --Olga
