Bryan King is co-owner of 12 Bones Smokehouse with his wife Angela, and where Shane Heavner is the head chef. Over the past decade, 12 Bones has quickly grown into an Asheville institution known best for its rule-breaking take on barbecue classics, such as their Blueberry Chipotle Baby Back Ribs. The restaurant has been featured in a variety of national media, from magazines like Southern Living and Garden & Gun to television networks like ABC, NBC, and the Travel Channel.

Angela King is the co-owner of Asheville, North Carolina's 12 Bones Smokehouse with her husband, David. 12 Bones has spent the last decade growing into a local institution by breaking the rules of barbecue. The restaurant has been featured in a variety of national media, from magazines like Southern Living and Garden & Gun to television networks like ABC, NBC, and the Travel Channel.

Shane Heavner is the head chef of 12 Bones Smokehouse. Of the eatery, Bon Appétit wrote, "Everything here is amazing, from the ribs to the corn pudding, but the BLT is ridiculous: house-cured brown-sugar bacon, fried green tomatoes, and pesto mayonnaise on thick slices of wheat bread." Mackensy Lunsford is a food writer, journalist, and a former chef and restaurant owner. If you've experienced 12 Bones, then you get it. If not, and Asheville isn't in your travel plans, get this cook book. I'm a pretty good, and experienced cook (if I say so myself, and I do). I own a large BGE and a Weber Performer, and have 35 years experience grilling with charcoal and about 15 years with my smoker. I've never owned a gas grill - not a snob thing, just don't see the reason. Anyways, this book starts out for the folks who may have little or no experience with grilling or making BBQ. Very low level 101 stuff for experienced grillers. However, the recipes are worth the price of admission! Their most famous sauces are laid out for you, and they are not overly complex nor do most of them have any exotic ingredients...which means you can jump right in w/ both feet and get grilling! It's also beautifully written and photographed. Time to get some blueberry chipotle ribs on! --Userbosco

Great cookbook for an even greater BBQ restaurant. Truly a no nonsense restaurant in the Asheville area that has relocated both of there original locations because of highway planning. But to incredibly nostalgic locations . The food is incredible and the recipes spot on. Buy the book , but don’t pass up the opportunity to go there. The second location has begun brewing its own beer at that location but serves bbq to go. The book is well thought out and written extremely well. --Michael Scoot 

Great, easy to make recipes! I couldn't quite duplicate the flavors from the actual restaurant, but I made some dank ribs! The secret must be their well seasoned equipment. I look forward to visiting 12 Bones someday again soon. --Hayduke
