Be forewarned this book is almost completely about cleaning and butchering seafood. Yea, 200 pages with nothing other than all the various techniques to clean a wide variety of different types of seafood. That being said, it's still a pretty handy resource. It has good step by step instructions with photos(not drawings) for each step. Also comes with a dvd which is cool. -Daniel P.
This is a great book if you want to learn how to handle fish in the Western style - boning, filleting, skinning, shucking - filled with instructive pictures and interviews with chefs, fishmongers, and fish buyers. The DVD is also a good primer, and the author has a lot of wisdom to impart. It's well laid out, designed, and written, definitely the best of class for this kind of instruction. -T. Miller
